In this test, carried out together with a professional gelato maker, we used the TERMORAPID T.3 to prepare a filter coffee base specifically designed for artisanal coffee granita production. The result was remarkable: an extremely aromatic, light, and airy granita with excellent overrun during the freezing process.
Why Use Filter Coffee for Coffee Granita?
Unlike espresso, filter coffee extraction produces a cleaner and more balanced beverage, highlighting the coffee’s aromatic characteristics without excessive bitterness or astringency.
Using the TERMORAPID T.3, we brewed filter coffee with a recipe of 100 grams of coffee per liter of water and a coarse grind size. This method ensures an even extraction of flavors and creates an ideal base for gelato and granita production.
Coffee Granita Production: From Mix Preparation to Batch Freezing
Once the extraction was completed, the brewed coffee was blended directly with the sugars specified in the recipe. One particularly interesting aspect of this process is that no additional water was added. The entire liquid phase of the recipe consists exclusively of filter coffee brewed with the TERMORAPID T.3.
The mixture was then transferred to a batch freezer, and after just 9 minutes of processing, the granita was ready. During this stage, the product incorporated a significant amount of air, developing a light and voluminous structure that delivers excellent production yield.
From Batch Freezer to Display Pan
After freezing, the granita is transferred to a display pan and maintained at serving temperature. During storage, part of the incorporated air gradually transforms into fine ice crystals, slightly modifying the product’s structure.
By stirring the granita periodically, it develops the classic texture of authentic artisanal granita: creamy, refreshing, and characterized by fine, uniform ice crystals.

Professional Coffee Granita Recipe
Ingredients
Yield: Approximately 1.3 kg of mix
- 1 liter of filter coffee brewed with the TERMORAPID T.3 (100 g coarse-ground coffee)
- 220 g sucrose
- 60 g dextrose
- 20 g invert sugar
Note: No additional water is added to this recipe. The entire liquid phase consists exclusively of filter coffee, maximizing coffee intensity and preserving the full aromatic profile in the finished product.
Method
- Brew 1 liter of filter coffee using the TERMORAPID T.3 with 100 g of coarse-ground coffee.
- Add the sucrose, dextrose, and invert sugar, stirring until completely dissolved.
- Rapidly cool the mixture.
- Transfer the mix to a batch freezer.
- Freeze for approximately 9 minutes, or until the desired texture is achieved.
- Transfer the granita to a display pan and maintain at serving temperature.
- Stir periodically to develop the characteristic texture of artisanal granita.
